Green Peppercorn Leg of Pork
Be Spice Inspired
Indian Green Peppercorn's flavour can be described as plaquant and fresh, with a bright aroma and crisp tang.
Grind the Indian Green Peppercorns coarsely, using a Pestle & Mortar or Spice Grinder.
Score the pork fat diagonally, forming diamond shapes and sprinkle with salt.
Combine the other ingredients to create a basting. Baste the meat (not fat) and also during the roasting time.
Place the meat on the rack of an oven-roasting pan, fat side uppermost, and roast for 25-30 minutes per 500g at 160 degrees / mark 6.

- 15ml Dead Sea Salt
- 250ml Sour Cream
- 15ml Grated Lemon Grind
- 2-3 cloves garlic, chopped
- 50ml Indian Green Peppercorns
- 50ml Dry White Wine
