Ingredients:
- 1/4 cup cooking oil
- 1 diced onion
- 1 – 2 tablespoons Jozi Chakalaka spice
- 2 teaspoons minced garlic
- Grated fresh ginger
- 1 – 2 tomatoes chopped
- 3 cups sliced cabbage
- 1 grated carrot
- 1 diced green pepper
- 1 diced red pepper
- 1 tin of baked beans
Instructions
In a large saucepan, heat oil over medium heat. Add onion and cook until translucent.
Add spices, garlic, and ginger and cook until fragrant. Then add tomatoes, bell peppers, carrot and cabbage and simmer, stirring occasionally. Don’t let the ingredients burn.
Add the baked beans and cook for another 2 – 3 minutes.
Adjust seasoning as required and serve warm as a vegetable side with rice and preferred meats or vegan dish. Great side dish for the BBQ.
